Kickin’ Dixie Quesadillas

1 Cup black beans (drained)
1 Cup corn (fresh, frozen or canned)
2 Cups shredded cheese (more or less)
1 Jar favorite salsa
1 Cup feta (optional)
1½ Cups pork or chicken prepared with Dixie Meat Rub
4 10 inch flour tortillas

1. Mix salsa, beans, and corn together.

Sprinkle cheese on ½ tortilla. Add meat (sprinkle with a little more rub if you like). Pour a generous amount of salsa mixture on top then some feta if you wish. Fold over tortilla. Grill on nostick griddle, pan or grill on medium-high heat - about 4-6 minutes or until both sides are golden brown and crispy and cheese is melted. Use a pizza cutter to slice into four wedges. Repeat with other tortillas.

Variation: You can add some chopped cilantro. Simply sprinkle some on top of your other ingredients and follow cooking directions above.

Rub My Belly - Sandwich

Amounts will vary - so you be the judge. We will give ingredients and cooking instructions.

Chicken (I like boneless/skinless) or..
Pork (I like boneless cutlets - you cook what you like)

Cook both with Dixie Meat Rub’s Original pork Rub or DMR’s Original Spicy Pork Rub then cut small of shred with fork and knife.

Red pepper - cut small or chopped
pimentos - jar or ½ jar
pineapple - can of crushed or whole fresh pineapple cut (don’t discard juice - put it in the pan)
1/4 cup honey mustard ( more or less if needed)
extra Dixie Meat Rub

you could also...throw some mandarin oranges in the mix.

In a small skillet, heat some olive oil. Cook pepper for 5-7 minutes on medium high heat. Add pineapple and pimentos - cook for about 3 minutes. Add honey mustard and one or 2 tsp. Of Dixie Meat Rub (your choice of flavor). Simmer for about 15 minutes - covered.

You now have some “Rub My Belly” special sauce. If you made too much, put in an airtight container and store in the freezer. While you’re at it, make extra meat and store that in the freezer as well.

Put some special sauce aside and mix the meat in with the sauce. Put on your favorite sandwich roll - I like the store brand sausage rolls. Add extra sauce if you like.
